Duck Fat Roast Potatoes

There are not many things in life better than potatoes roasted in duck fat (okay there are quite a few, however duck fat potatoes are a thing of beauty if done right). This is a fairly simple recipe and probably no different to most, but, don’t get stuck on trying to make your potatoes all the same size, for one it screams needy and secondly there is no concern that your potatoes won’t be cooked, so why not have different textures on your plate.

Generally I use an Agria Potato, but whatever is recommended as a good roaster in your part of the world will do. I serve these potatoes with pretty much anything (except some desserts) and always have a supply of duck fat in the fridge just in case.

This should be enough for six (along with a protein and other vegetables). There should be no gluten in potatoes, duck or salt, so you should be good.

Ingredients:
5 x medium sized potatoes, peeled and cut into about 5 uneven pieces
250g Duck fat
Salt

Method:

  1. Preheat oven to 200°c, place small roasting pan in over with the duck fat to heat up.
  2. Place the peeled/chopped potatoes into a saucepan of cold water, salt generously.
  3. Bring pan to a boil on a medium high heat and boil for 10 mins
  4. Strain and return the potatoes to the pan and leave to dry for 1 min, then put the lid on and vigorously shake the pan. This will give the potatoes a rough exterior which will be better when roasting. Give the potatoes a taste of salt
  5. Place the potatoes in the hot duck fat and return to the oven.
  6. Turn the potatoes every 10 mins
  7. The potatoes should be done after 40 mins, but if their not golden all over give it another 10 mins (chances are you are resting your meet and another 10 mins isn’t going to hurt).
  8. Remove pan from the oven and drain the potatoes on kitchen paper.
  9. Give them another taste of salt and serve.
